  • ½ cup diced carrots
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 3 tablespoons flour
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce
  • 5 cups chicken broth
  • 1 cup heavy cream (or plant-based cream)
  • 1 ¼ lbs. red potatoes (about 6 small potatoes)
  • 2 cups shredded cheddar cheese (optional)

Instructions

  1. Gather all ingredients and dice the onion, carrots, celery, and potatoes.
  2. In a large pot over medium heat, brown the ground turkey or beef for 5-7 minutes.
  3. Add butter and sauté diced onions, carrots, celery, and minced garlic until softened (4-5 minutes).
  4. Sprinkle flour over the mixture; stir well and cook for one minute before adding dried herbs and pepper.
  5. Gradually pour in chicken broth while stirring to avoid lumps; add soy sauce and hot sauce. Bring to a gentle boil.
  6. Add diced red potatoes; reduce heat to low and simmer until tender (15-20 minutes).
  7. Stir in heavy cream and warm through before serving.
