  • 1 ½ tsp salt
  • 2 ¼ tsp yeast
  • 1 cup fresh blueberries
  • 1 cup warm water
  • 1 cup sourdough discard
  • 2 tbsp honey
  • 1 tbsp baking soda
  • 1 tbsp sugar

Instructions

  1. In a stand mixer bowl, whisk together flour, salt, and yeast.
  2. In a separate bowl, mix warm water, honey, and sourdough discard until dissolved. Slowly add to the dry mixture in the stand mixer.
  3. Knead on low speed for about 5-10 minutes until smooth; gently fold in blueberries.
  4. Cover the dough and let it rise for about two hours until doubled in size.
  5. Divide dough into eight equal pieces and shape into bagels.
  6. Boil water with baking soda and sugar; boil each bagel for 30-45 seconds on each side before transferring to a baking sheet.
  7. Preheat oven to 425°F (220°C) and bake for 20-25 minutes until golden brown.
