- 1 tbsp baking soda
- 1 tbsp sugar
Instructions
- In a stand mixer bowl, whisk together flour, salt, and yeast.
- In a separate bowl, mix warm water, honey, and sourdough discard until dissolved. Slowly add to the dry mixture in the stand mixer.
- Knead on low speed for about 5-10 minutes until smooth; gently fold in blueberries.
- Cover the dough and let it rise for about two hours until doubled in size.
- Divide dough into eight equal pieces and shape into bagels.
- Boil water with baking soda and sugar; boil each bagel for 30-45 seconds on each side before transferring to a baking sheet.
- Preheat oven to 425°F (220°C) and bake for 20-25 minutes until golden brown.
