  • 1 tablespoon olive oil

  • 3 tablespoons miso paste (red or white)
  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • 1 can full-fat coconut milk
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the onion until translucent. Stir in garlic and ginger until fragrant.
  2. Add chopped carrots and pour in vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender (15-20 minutes).
  3. Blend the soup until smooth using an immersion blender or regular blender.
  4. Return blended soup to low heat, stirring in miso paste until dissolved. Add coconut milk and soy sauce; mix well.
