  • 2 lb sweet potato, peeled and cubed
  • 4 tbsp olive oil, divided
  • 2 cans black beans, rinsed and drained
  • 2 garlic cloves, minced
  • 1 tbsp Homemade Taco Seasoning
  • 1/4 tsp cayenne pepper
  • 1/2 cup water
  • 1/2 tbsp lime juice
  • Corn tortillas
  • Authentic Guacamole
  • Cilantro
  • Hot sauce or salsa
  • Shredded cabbage or lettuce
  • Vegan Shredded Cheese

Instructions

  1. Preheat the oven to 425°F. Toss sweet potato cubes in 2 tbsp olive oil and salt, then spread on a parchment-lined sheet pan. Roast for 30-35 minutes, flipping halfway.
  2. In a saucepan, heat remaining olive oil over medium-high heat. Add garlic and cook until fragrant. Stir in black beans, taco seasoning, cayenne pepper, and water; bring to a simmer. Cover and cook for 10 minutes.
  3. Mash half of the black bean mixture for creaminess, then mix in lime juice and season with salt and pepper.
  4. Warm corn tortillas and fill them with black bean mixture and roasted sweet potatoes. Top with desired toppings.
