- 1 sweet potato (about 9 oz), grated
- 1 tsp smoked paprika
- ½ tsp chili (optional)
- ½ tsp cumin (optional)
- 1 handful of baby spinach
- 1 cup black beans (cooked or canned)
- ½ cup corn (cooked or canned)
- 2–3 tbsp fresh parsley (chopped)
- salt, pepper (to taste)
- 6 gluten-free tortillas
- 1 cup vegan cheese (grated)
- 3 tsp oil
Instructions
- In a mixing bowl, combine grated sweet potato with olive oil, smoked paprika, salt, and pepper. Add black beans, corn, and baby spinach; mix well.
- Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle half with vegan cheese.
- Spoon the filling over the cheese and top with more cheese before folding the tortilla in half.
- Cook for about 3-4 minutes on each side until golden brown and crispy.
- Let cool slightly before slicing into wedges. Serve warm.
