  • 3 medium carrots (peeled and diced)
  • 4 medium stalks of celery (diced)
  • 8 cups turkey bone broth
  • 23 cups shredded turkey meat
  • 2 bay leaves
  • ½ cup fresh parsley (finely chopped)
  • ½ fresh lemon (juiced)
  • 1 tsp olive oil
  • Kosher salt
  • pepper

Instructions

  1. Sauté the diced onions, carrots, and celery in olive oil with a pinch of kosher salt for about 5 minutes until tender.
  2. Pour in the turkey bone broth and add bay leaves and shredded turkey meat. Bring to a boil over medium heat.
  3. Reduce heat to low and let simmer gently for about 20 minutes to meld flavors.
  4. Remove bay leaves, stir in fresh parsley and lemon juice, then season with salt and pepper to taste.
