  • 32 oz beef broth
  • 3 cups cubed russet potatoes
  • 14.5 oz petite diced tomatoes
  • 8 oz tomato sauce
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • 16 oz frozen mixed vegetables

Instructions

  1. Heat the oil in a large soup pot over medium heat. Sauté the diced onions for 1-2 minutes until translucent, then add the minced garlic and cook for an additional 30 seconds.
  2. Pour in the beef broth, cubed potatoes, petite diced tomatoes, tomato sauce, and seasonings. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to medium-low and stir in the frozen mixed vegetables. Cook for an additional 20-25 minutes until all vegetables are tender.
