Ingredients

  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 stalks celery, finely chopped
  • 1 ½ cups cubed potatoes (about 45 small potatoes)
  • 2 carrots, peeled and chopped into coins
  • Pinch of salt
  • ½ cup dry green or brown lentils, rinsed
  • ½ tsp thyme
  • ½ tsp marjoram
  • 6 cups vegetable stock

Instructions

  1. In a large pan over medium heat, sauté the chopped onion, minced garlic, and finely chopped celery in olive oil until the garlic is translucent.
  2. Add cubed potatoes and sliced carrots; season lightly with salt and fry for 1-2 minutes.
  3. Stir in rinsed lentils, thyme, marjoram, and vegetable stock. Bring to a boil then reduce heat to simmer for 25–30 minutes until lentils are tender.
  4. Remove from heat and stir in shredded cheddar cheese until melted.
  5. Mix a portion of the soup with sour cream for added creaminess before returning it to the pot.
  6. Optional: Blend part of the soup for a creamier texture if desired.
  7. Taste and adjust seasoning before serving hot.
